Spicy ribbon dog

For the zucchini (courgette) ribbons:
  • 2 zucchinis (courgettes)
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 tablespoon fresh coriander, chopped
  • 1/2 fresh red chilli, chopped
  • Pepper to taste

  1. Slice the zucchinis (courgettes) into long ribbons  using a mandoline slicer.
  2. To cook the zucchini (courgette) ribbons, heat oil in a frying pan over medium-high heat. Add garlic and zucchinis (courgettes) and toss through oil until slightly soft (4-5 minutes). Add the coriander and chilli, then season to taste with pepper.
  3. To cook the dogs, heat a gas or charcoal grill to medium heat. Add the Alt Meat Co. Alternative Sausages, turning frequently, cook for 7-10 minutes or until golden brown. Add the buns to the grill, cook for approx. 30 seconds or until warmed and crisp with light grill lines.
  4. To serve, top each hot dog bun with courgette ribbons and your favourite hot dog sauces. Garnish with fresh coriander. Serve immediately.
