A beautiful deep pink smoothie full of antioxidants makes a perfect “pick me up” healthy snack. 
2 cups frozen dragon fruit pieces
1/2 cup frozen raspberries
2 large frozen bananas, chopped
1 cup So Good™ Coconut Milk Unsweetened

Toppings
2 tbs coconut flakes, toasted
2 tbs blueberries
2 tbs fresh diced dragon fruit

  1. Place dragon fruit, raspberries and banana and coconut milk in a blender and blend until thick and creamy.
  2. Spoon mixture into glasses and top with toppers. Serves 2.

Tips

  • Dragon fruit is another name for Pitaya and frozen pitaya can be purchased from Health Food stores.
  • As bananas become over ripe, peel and place them in the freezer. Frozen banana gives nice cream its smooth creamy texture.
