Bring pineapple juice to the boil in a jug in the microwave.
Place couscous in a heatproof bowl and pour over boiling pineapple juice. Stir to combine.
Stand for 5 minutes or until liquid is absorbed.
Fold pineapple, apricots and almonds through couscous.
Serve with yoghurt and garnished with fresh mint.
