Oat pancakes

  • ½ cup white plain flour
  • 1 teaspoon baking powder
  • 2 tablespoons sugar
  • ¼ teaspoon salt
  • ¾ cup rolled oats
  • 1 egg
  • ¾ cup dairy milk or Sanitarium So Good regular soymilk
  • 2 tablespoons margarine, melted
  • Extra margarine for cooking

  1. Sift flour, baking powder, sugar and salt into a mixing bowl and mix in rolled oats.
  2. Make a well in the centre of dry ingredients. Mix egg, So Good and margarine together. Pour into well and stir gently to combine ingredients.
  3. Place ¼ of a cup of mixture in a moderately hot non-stick frypan. Cook until bubbles form, then turn and cook for a further 1-2 minutes.
  4. Serve with maple syrup and fruit.
