Why not send the kids to school with something a little different in their lunchbox? These wraps are a tasty alternative to sandwiches.
  • 1 medium kumara, thinly sliced 
  • 1 tbs oil 
  • 6 tortillas 
  • 450g can refried beans 
  • 6 tbs light sour cream 
  • 6 tbs salsa 
  • 2 fresh beetroot, peeled and grated 
  • 2 carrots, grated 
  • 2 cups baby spinach leaves

  1. Toss sliced kumara in oil, place on a baking tray and roast in a hot oven, 200°C, for 20 minutes. Drain on kitchen paper. 
  2. Spread each tortilla with 1 tablespoon each of sour cream and salsa, ⅙ each of the refried beans, kumara, beetroot, carrot and baby spinach leaves in a 5cm wide strip down the centre of the tortilla, leaving a 3cm gap at the top and bottom. 
  3. Fold both ends in, roll up firmly and turn the wrap over to secure the folds. 
  4. Place in a heated sandwich press until toasted and warmed through. Cut in half to serve.

  • Try using flavoured tortillas. These can be bought at major supermarkets and come in varieties such as sun-dried tomato and spinach.
