Description

This deliciously Creamy roasted cauliflower is easy to make and a good source of protein, calcium and fibre and low in saturated fat. A great light meal for those cold winter evenings.
  • 1 head of cauliflower
  • 2.5 tbs of olive oil
  • 1 tbs of plain flour
  • 1 cup of So Good Almond Milk Unsweetened
  • 1 garlic clove, finely diced
  • 1/4 tsp of ground nutmeg
  • Salt and pepper to taste
  • 10g flat leaf parsley, coarsely chopped
  • 2 tbs of dried cranberries or currants

  1. Preheat your oven to 220°C fan forced.
  2. Brush the cauliflower with one tablespoon of olive oil and bake on a lined tray for 45-50 minutes until tender.
  3. While the cauliflower is baking, place remaining olive oil and flour in a saucepan.
  4. Mix well and cook for 1-2 minutes on a medium heat.
  5. Add a third of the almond milk and whisk continuously until the sauce starts to thicken.
  6. Repeat step 5 until all of the almond milk has been incorporated.
  7. Remove from the heat and add the garlic, salt, pepper and nutmeg. Mix well.
  8. Pour the almond milk sauce on top of the cauliflower.
  9. Sprinkle the cauliflower with parsley and cranberries and serve hot.
