This healthy breakfast or dessert option is made from naturally sweetened, high fibre and antioxidant rich black rice. This easy to prepare recipe is gluten free and vegan and is well worth trying.
  • 1 cup black rice
  • 3 cups water
  • 4 cups water, extra
  • 400g can coconut milk, reduced fat
  • 1 tablespoon honey
  • ½ teaspoon vanilla

  1. Soak rice overnight in water. Rinse and drain.
  2. Place soaked rice and extra 4 cups water in a saucepan. Bring mixture to the boil, then reduce heat and simmer for 20 minutes, stirring every few minutes.
  3. Add remaining ingredients and simmer for further 10 minutes.
  4. Garnish with nuts, seeds and fruits of choice. Serves 6.

Tips

  • Can be served hot or cold. Great summer breakfast idea.
  • Black rice is readily available in the supermarket. Soaking the rice overnight reduces the cooking time. If you do not soak the rice it will need longer cooking time.
