Description

A scrumptious dish that's so versatile it's perfect for the whole family.
  • 1½ cups self-raising flour
  • ½ cup soy flour
  • ½ tsp ground cinnamon
  • ¾ cup caster sugar
  • ½ cup canola oil
  • 2 tsp egg substitute
  • 30ml water
  • 2 ripe medium bananas
  • ½ cup soy milk
  • ½ cup walnut pieces
  • ½ cup dates, chopped

  1. Preheat the oven to moderate 180°C. Lightly grease a loaf tin with canola cooking spray. 
  2. Place the flours, cinnamon, sugar, egg, water, bananas and soy milk in a food processor and blend until smooth.
  3. Fold the walnut pieces and dates into the mixture and pour into the prepared loaf tin. Bake for 1 hour, or until a skewer comes out clean. Allow to cool slightly in the tin before turning out onto a wire rack. 

Tips

  • Two egg whites can be used instead of the egg substitute if preferred.
  • Serve warm with honey and reduced fat cream cheese for a delicious treat.
  • To create a tasty gluten free loaf, simply replace the self-raising flour with gluten free self-raising flour.
  • Remember to always check the label of each ingredient to ensure it is gluten free.
