Creamed rice

Ingredients

  • 6 cups Sanitarium So Good Essential soymilk or dairy milk 
  • ¼ cup sugar 
  • ¾ cup short-grain white rice 
  • ½ cup sultanas 
  • ¼ teaspoon ground cardamom (optional) 
  • 1 tablespoon chopped toasted pistachio nuts

Method

  1. Place the So Good, sugar, rice and sultanas in a large heavy-based saucepan. Bring the mixture to the boil, then reduce the heat and simmer, stirring occasionally, for about 45 minutes or until the mixture thickens. 
  2. Add the ground cardamom, if using. 
  3. Serve the rice topped with pistachio nuts.

Tips

  • Make sure you have a heavy base saucpan to stop rice mixture burning.
