Caramelised Onion and Lentil Patties

Ingredients

  • 1 cup red lentils
  • 1 tablespoon olive oil
  • 2 medium red onions, finely sliced
  • 2 tablespoons brown sugar
  • 2 tablespoons water
  • 3 medium zucchini grated, squeeze to remove excess water
  • 1 cup fresh wholemeal breadcrumbs
  • 1/2 cup wholemeal flour
  • 2 eggs, lightly beaten
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander

Method

  1. Cook lentils in a large pot of boiling water for 10-12 minutes or until tender. Drain.
  2. Heat half of the oil in a large frypan over medium heat. Add onions and cook until brown and soft. Add brown sugar and water. Stir to combine. Cook for 2 minutes. Cool.
  3. Place lentils, onion, zucchini, breadcrumbs, flour, eggs and spices in a large bowl. Mix well and shape into patties.
  4. Heat remaining oil in a non-stick frypan over medium heat. Cook patties for 5 minutes on each side or until golden. Drain on absorbent paper. Makes 18 patties.

Tips

  • Red lentils are a good source of protein, fibre, iron, magnesium, zinc and are cholesterol free.
  • Red lentils don't require any prior preparation and are ready to use straight away.
