Banana and pecan loaf

Banana Pecan Loaf

Ingredients

  • 60g margarine 
  • ¼ cup sugar 
  • 3 ripe bananas mashed 
  • 1 egg, lightly beaten 
  • ¼ cup chopped pecans 
  • 1 cup plain wholemeal flour 
  • 1 cup plain white flour 
  • 2 teaspoons baking powder 
  • ½ teaspoon salt 
  • ¼ cup Sanitarium So Good Essential soymilk

Method

  1. Cream margarine and sugar until light. Stir in bananas, egg and pecans. 
  2. Sift in dry ingredients and mix well. 
  3. Stir through So Good and place in a lightly greased loaf tin. 
  4. Bake in a moderate oven, 180°C, for 35 - 40 minutes, or until cooked. Serve warm or cold.

Tips

  • Other nuts, like walnuts work just as well in this recipe.
