Asian Fillets with Egg Noodles

Lemon and Soy Sauce Fillets

Ingredients

  • 9 dried shiitake mushrooms (whole), soaked in hot water for 30mins
  • 1 teaspoon olive oil
  • 1 packet Vegie Delights Original Fillets
  • 1 tablespoon light soy sauce, reduced salt
  • 1 tablespoon lemon juice
  • Lemon wedges, chopped chives and to decorate
  • 300g Asian-style egg noodles
  • 450g (3 cups) green vegetables, steamed (choose between broccoli, green beans, baby bok choi or Asian greens)

Method

  1. Drain the mushrooms and sauté' in frying pan with light olive oil for 2 minutes each side.
  2. Add Original fillets and sauté' for 30 seconds each side. Add soy sauce and lemon juice, turn the fillets once more and remove from heat.
  3. As an alternative, both mushrooms and fillets can be cooked on the barbeque, and then drizzled with soy sauce and lemon juice before serving.
  4. Arrange two fillets per plate with 3 shitake mushrooms and a lemon wedge on the side, and sprinkle with chopped chives. Serve with noodles and steamed vegetables.
