Falafel rolls

    A fresh, delicious and satisfying meal idea. Make the felafel patties and hummus in advance, and take them along to enjoy at your next family picnic.

    Ingredients

    Felafel
    • 425g can chickpeas or 2 cups cooked chickpeas
    • 1 large onion
    • 1 tsp ground coriander
    • 1 tsp ground cumin
    • 1 pinch chilli powder
    • 1 tsp crushed garlic
    • ½ tsp salt
    • ½ cup wholemeal plain flour to coat
    • 1 tbs olive oil
    Hummus
    • 1 ½ cups cooked chickpeas
    • 3 tbs tahini paste
    • 3 tsp crushed garlic
    • 3 tbs lemon juice
    • 2 tbs water
    Serve with
    • 4 wholemeal pita bread
    • 2 tomatoes, sliced
    • 2 lettuce leaves
    • 4 tbs hummus
    • red onion

    Method

    1. Felafels - blend chickpeas, grate onion and place in a bowl with spices, crushed garlic and salt. Form tablespoons of mixture into patties and fry both sides until golden brown.
    2. Hummus - place all ingredients in a food processor and process until smooth.
    3. Assembly - place lettuce in the centre of the pita bread. Add 2 halved felafels, then top with tomato slice and red onion. Drizzle hummus over the top and roll up the bread.
