Date and nut slice

    High in fibre and bursting with flavour, this simple slice is perfect for sharing over a hot drink with family and friends.

    Ingredients

    • 2 eggs
    • ¼ cup caster sugar
    • ½ tsp vanilla
    • ½ tsp cinnamon
    • ¾ cup plain wholemeal flour
    • ¾ tsp baking powder
    • 2 cups dates, finely chopped
    • 2 cups pecans, finely chopped

    Method

    1. Place eggs in a bowl and beat with an electric mixer until light and fluffy.
    2. Add sugar and vanilla and beat well.
    3. Add sifted cinnamon, flour and baking powder as well as dates and pecans. Stir well.
    4. Spread mixture into a lightly greased and lined 26cm x 16cm lamingtion tin. Bake in a slow oven, 150°C for 30 minutes.

    Tips

    • Cut slice and store in an airtight container for 3-5 days.
    • To make a tasty gluten free treat, simply subsitute the plain wholemeal flour with gluten free plain flour.
    Remember to always check the label of each ingredient to ensure it is gluten free.
