Blueberry almond slice

    Treat yourself and your kids with this tasty slice. It’s great for that perfect afternoon tea, lunchbox snack or picnic treat.

    Ingredients

    Base
    • 1 cup wholemeal plain flour
    • ½ cup white plain flour
    • ¼ cup caster sugar
    • 125g margarine
    Topping
    • 2 eggs
    • ¼ cup So Good Almond Milk
    • ½ cup caster sugar
    • 125g ground almonds
    • ¼ cup white plain flour
    • ½ tsp baking powder
    • ½ tsp cinnamon
    • 1 cup frozen blueberries

    Method

    1. To make the base, place wholemeal and white flours, sugar and margarine into a food processor and process until mixture forms a ball. Alternatively, rub margarine into dry ingredients with fingertips. Press mixture onto a lightly-greased and lined 19cm x 29cm lamington tin and dock with a fork. Bake in a moderate oven at 180°C for 10 minutes.
    2. To make the topping, whisk eggs, almond milk and sugar together. Stir through ground almonds, flour, baking powder and cinnamon. Fold through blueberries.
    3. Spread topping over base and return to oven and bake for a further 10 minutes. Cut into 20 slices.

    Tips

    • Substitute blueberries with strawberries or any other berry of your choice to change the flavour of this tasty recipe as desired.
